1. When the white truffle is formed it is brown or black, rounded, and covered with polygonal warts having a depression at their summit; the flesh (gleba) is first white, then brown or gray, and when mature becomes black with white veins having a brown margin.


2. The origin of the white truffle or ‘Alba madonna' (Tuber magnatum) comes from the Langhe area of the Piedmont region in northern Italy and, most famously, in the countryside around the city of Alba.


3. Growing symbiotically with oak, hazel, poplar and beech and fruiting in autumn, white truffles can reach 12 cm diameter and 500 g, though are usually much smaller.

8. Giancarlo Zigante and his dog Diana found one of the largest truffles in the world near Buje,Croatia whilst out walking in the countryside around the town. It is said to be the largest ever found by a single person.


9. The odour of white truffles is well marked and pleasant in its smell and taste.


10. In order to cultivate white truffles, Calcareous ground is dug over and acorns or seedlings planted. Soil from truffle areas is usually spread about, and the ground is kept in good condition by light plowing and cultivating in order to create conditions for growing truffles.


11. The largest truffle in the world weighed 1.31 kilograms (2 lb 14 oz) and has entered the Guiness Book of Records weighing the most for a truffle ever found.


12. The record price paid for a single white truffle was set in December 2007, when Macau casino owner Stanley Ho paid US$330,000 (£165,000) for a specimen weighing 1.5 kilograms (3.3 lb), discovered by Luciano Savini and his dog Rocco.
